A NOTE FROM HABEYAnne Queen (1911-2005) grew up in Haywood county in the mountains of North Carolina, near my hometown of Asheville. After ten years of factory work, Anne managed to earn a Bachelor’s degree at Berea College in Kentucky followed by a Divinity degree from Yale University. During the turbulent 1960’s into the 70’s, Anne was Director of the Campus Y at my alma mater UNC-Chapel Hill, where she always fought for social justice and was a driving force in bringing people together. A legendary hostess and cook, her home was a meeting place for state and campus leaders – and on occasion I was lucky to earn a spot on her guest list. This is where I savored my first Cheese Biscuits, which I later adapted to serve at catering jobs in my early days in New York City. Habey’s CHEESE BISCUITS are inspired by Anne Queen, and I dedicate them to her.
